Basic consideration on the microbiological safety of the orange juices expended in the surroundings of the salesian polytechnic university-quito campus, campus “El Girón”

Abstract

In the present investigation, an isolation was performed in Mac Conkey Agar medium and the quantitative analysis of Gram negative bacilli found in samples of natural orange juice elaborated and sold in the surroundings of the Salesian Polytechnic University-Quito, Campus “EL Girón” The project was carried out at the Center for Research and Valuation for Biodiversity. For the research, five samples were taken from different places in the sector, working at six dilutions (10?1 to 10?6 ml) in physiological water. The samples were cultured at a temperature of 35 to 37?C for three days, the first 8 hours were quantified every 2 hours according to the usual time of consumption and as recommended in the INEN norm the Colony Forming Units were quantified up to 72 hours. From the results obtained it was verified that 40% of the orange juice expended in the surroundings of the Salesian Polytechnic University-Quito, Campus “El Girón” are not suitable for human consumption since they exceed the maximum permissible limits of total coliforms Established in the Ecuadorian Technical Regulation INEN 2337: 2008.
